Mango and The Moo Moo Night….The Recipe

I chose this music because it might have been what got Mango through her captivity? Crank it up while you cook!

When I read the journal entry for this one I wondered if during his short career as Passenger Service Co-ordinator R.B. fought the urge to channel Julie Mcoy- Cruise Director on The Love Boat. He was simply ahead of his time.

Try this recipe with coconut rice and a small salad. I’ve included a link in case you want to try your hand at creating your own Jerk Seasoning. It’s easy and fun…like me.

  • 1 tablespoon Jamaican jerk seasoning. You can buy premade or try this recipe : https://foodieandwine.com/jamaican-jerk-seasoning-recipe/
  • 2 tablespoons fresh lime juice
  • 1 ½ teaspoons canola oil
  • 1 pound trimmed pork tenderloin
  • 2 ripe mangoes 
  • Cooking spray 
  • ¼ cup packed dark brown sugar 
  • ¼ cup dark rum plus extra for sampling purposes
  • 2 teaspoons unsalted butter 
  • ¼ teaspoon kosher salt
  • Combine jerk seasoning, 1 tablespoon lime juice, and 1 teaspoon oil in a medium bowl.
  • Cut pork crosswise into 8 pieces. Use your hand to flatten each piece to about 1/2-inch thickness.
  • Add pork to spice mixture and toss to coat well. Toss as in mix, not tossing out. That’d be pretty pointless, right?
  • Cut mangoes in half lengthwise then discard pits. Next cut each mango half into 1-inch cubes. Don’t cut the skin. Brush cut sides of mangoes with 1/2 teaspoon oil.
  • Coat pan with cooking spray.
  • Heat a grill pan over high heat.
  • Sample rum while pan is heating
  • Add pork to pan and cook 4 minutes on each side or until doneness (doneosity?)
  • Add mango halves, skin sides up, to pan; cook 3 minutes. Remove from heat.
  • Combine brown sugar, rum, butter, and salt in a small saucepan. Bring to a boil. Reduce heat, and simmer until thickened.
  • Stir in 1 tablespoon lime juice.
  • Drizzle sauce over pork and mangoes.
  • Enjoy
